Its so tempting to eat out, surrounded by great restaurants in Soho. However buying fresh ingredients and creating your own meals doesn’t have to be difficult. Here’s how to make interesting and healthy lunches for a week for as little as £8!

Monday- Pitta bread pouches
Whisk 2 eggs in a bowl and pop it in the microwave for a minute. Chop up some pepper and place both inside half a pitta bread with some hummus and you’ve got yourself some lunch.
Tuesday – Burrito bowl
Open up your rice packet and pop it in the microwave for the recommend time. Heat up some kidney beans from a can and smash half an avocado. Add all three in a bowl along with some chopped peppers and salsa and enjoy!
Wednesday – Couscous
Add 2 handfuls of spinach to a bowl of whisked eggs and pop it in the microwave for a minute. Add couscous and some boiling water to a second bowl and leave it to soak up and cook. Mix the two together and add either hummus or salsa for some extra flavour.
Thursday – Stuffed sweet potatoes
Cut a sweet potato in half with some water and place in the microwave for 3 mins. Place in for an addition 3 mins after turning it over. Add some kidney beans to the center and heat up for 1 min. Mash or cut up the remaining avocado and add on top.
Friday – Pitta bread
With plenty of ingredients left over on the last day of the working week, you can have free reign on what your prefer to have on the last day. It might be best to recycle Monday lunch meal with some added extras to keep things different.
